Artisan French-inspired pastries, coffee coming soon to Coquitlam

A former pop-up bakery is opening a brick-and-mortar patisserie and café at Eagle Ridge Plaza in Coquitlam in the coming weeks.

Everyone likes desserts and when a new patisserie is opening up with French-inspired artisan treats and fresh coffee, social media will go wild.

At least that seems to be the case already with Pourquois Pas, a new Coquitlam pastry shop and café opening up in Eagle Ridge Plaza at Unit 304, 1194 Lansdowne Dr, Coquitlam.

The bakery confirmed via Instagram that the shop is under construction with an opening date in late November or early December.

"The space is still under construction at the moment so hard to say exactly," a Pourquois Pas spokesperson confirmed.

Up until now, Pourquois Pas was selling its baked goods through pop-ups and online, with delicious deserts ranging from Strawberry Vanilla Bean Panna Cottato  this past summer to Vanilla Pecan Praline Bûche de Noël for the holidays.

Other sweet treats featured via Instagram include Tiramisu Cream Puff and a Bailey’s espresso-soaked lady finger sponge around a coffee diplomat cream — topped with silky mascarpone whipped cream.

For cookies, think soft, buttery White Chocolate Macadamia Nut and Double Chocolate Chunk cookies.
