Holiday recipe: Port Coquitlam culinary teacher's cherry and nut cookies

Port Coquitlam food advocate and culinary teacher Karen Curtis shares her fruit and nut cookie recipe based on a family tradition.

The Christmas season is about family, friends and fellowship. It’s also about food — from grand feasts of turkey and stuffing to boundless snacks stretching our belts.

In the spirit of the holidays, the Tri-City News recently asked some of the people you read about to share their favourite must-try recipes.


This recipe was my Granny's and I grew up with them. They are still a favourite!

 

Ingredients

  • One (1) cup butter
  • 3/4 cup brown sugar
  • ½ tsp vanilla
  • 1/8 tsp salt
  • 2 ½ cups flour
  • One (1) cup walnuts or pecans
  • 3/4 cup red glace cherries
  • 3/4 cup green glace cherries

 

Directions

Cream butter, add sugar and remaining ingredients.

Form dough into logs roughly two inches in diameter and eight inches long.

Wrap in plastic wrap and chill overnight.

Slice the logs into cookies roughly ¼ inch thick.

Bake on a greased cookie sheet at 350°F for eight minutes, watching closely.

This recipe can be made ahead of time and kept in the freezer.

You can also change up the ingredients.

Instead of cherries and nuts I sometimes put crushed candy canes and white chocolate chips.
