Taryn Barker, of The Little Butcher in Port Moody, is sharpening her skills to help Canada compete at the World Butcher Challenge to be held in Paris next March.

A fundraising event to be held at the Site B community and event space (3012 Murray St.) in Port Moody Friday, Aug. 30, promises to be a cut above.

The Butcher’s Garden Party celebrates Butchery Team Canada’s collection of top butchers from across the Canada that is co-captained by Taryn Barker of The Little Butcher in NewPort Village.

The team of eight carvers and finishers is sharpening its blades to compete at the World Butchers Challenge to be held in Paris, France, next March.

All proceeds from the $150 tickets, as well as a silent auction, grab bags and cornhole tournament, will support the team’s preparation and participation in the so-called “Olympics of Meat” that brings together the top meat cutters from around the world to compete for the F.Dick Golden Knife.

Barker was a finisher on Canada’s entry at the previous World Butchers Challenge that was held in Sept., 2022, in Sacramento, Calif. She was responsible for making the cuts of beef, pork, lamb and chicken look their best in themed displays that include spices, garnishes, pastries, produce and tableware.

She said the pressure to plan and execute the cuts and presentation within the competition’s three-and-a-half hour time limit is intense.

“There’s cool things you can do as a butcher,” said Barker, who’s also competed at other individual butchering events around the world like Butcher Wars and helped organize the first BC’s Best Butcher competition earlier this year.

Barker said competitive butchering pushes the industry to elevate its offerings to customers, introducing consumers to new cuts and flavour possibilities when shopping at their meat counter.

“Competition really pushes butchers to be better and bring a higher standard to their trade,” she said.

The fundraising Garden Party event features a variety of hours d’ouvres and canapés prepared by local chefs and providers like Port Moody BBQ master Rusty Johnson, Ronan Barr of The One Sixty and Inlet Seafoods, along with desserts from Gabi & Jules, Rocky Point Ice Cream and Hollie Fraser, who owns Punk Rock Pastries in Burnaby.

Beverages include beers from local favourites Rewind, Parkside and Yellow Dog breweries, wine from Andrew Peller Imports as well as cider, spirits and non-alcoholic beverages.

The event runs from 7 to 10 p.m. and tickets are available at EventBrite.
